Ancien barman de profession, grand voyageur et gastronome, John Mike a créé Tripes & Caviar en 2011 à Montréal. Il combine avec brio génie, talent et expérience avec la fougue d’un jeune étalon de course turc. Éparpillé (avec ses mains) mais solidement ancré dans ses valeurs, il pousse les membres du Club à repousser leurs limites culinaires et briser les frontières du repas conventionnel.

Obsédé par le respect accordé à la transformation des produits, John Mike souhaite non seulement éduquer les membres du Club mais aussi changer la façon dont les gens à travers le monde traitent les animaux que nous mangeons tous les jours. À ce jour, T&C compte 14 évènements exclusifs dans deux villes majeures, une branche traiteur ultra-corporative en pleine expansion et depuis 1 mois, le T&C Castle, au 3725 rue Welington.

He combines genius, talent and experience with the youth boldness of a turkish sea biscuit. He constantly thrives on inspiring and provoking his members through his events by pushing their culinary limits and breaking their palate’s boundaries. Being obsessed with sustainable food transformation and its values, John Mike not only wishes to educate the club’s members but also has an avid desire to change the way people around the world treat the animals and products we eat each day.

Created in 2011 in Montreal, John Mike is the host and Chef of Tripes & Caviar, a kick-ass culinary movement, foodclub, catering, cooking and mixology school. So far, T & C has hosted 14 exclusive events in two major cities, offered a booming catering service, and 1 month ago, launched the T&C Castle at 3725 rue Wellington.
