Caleb France

Born in Indiana in 1982, Caleb France has spent over a decade developing his passion for creativity and community. Graduating from Taylor University in 2004 with the desire to become an entrepreneur, France combined his two loves of business and cooking and created Flying Fish, INC. which has now grown into multiple Cerulean Restaurants in Winona Lake & Indianapolis as well as Light Rail Roasters, Light Rail Cafe, The Garden Winona, Winona Heritage Room & CLF Development. Caleb, his wife Courtney, and sons Tennyson and Huxley find inspiration from travel, but bring it back home with their belief in the wonderful people and ingredients of the Midwest. France creates not only restaurants, but longs to build spaces that foster communion while bringing a modern sensibility that inspires.
