About the speaker
Kris Canada is a Columbia, MO native and currently the Head Chef at Boone Health Hospital as well as Creator and Executive Chef at Roux Pop-Ups.
At the hospital, Kris prepares patient meals as well as creates, prepares, and serves a specialized lunch option in the cafeteria. He takes great pride and joy in offering his creations to both staff and visitors. Food is Kris’ passion and having the opportunity to create his own daily meal is something he’s extremely grateful for.
Recently, he’s combined that passion with his favorite cuisine, Cajun & Creole. Kris started Roux Pop-ups as a way to share his love of New Orleans style food with his community. As a traveler and a chef, he has had the good fortune of trying different foods throughout different regions. He found his heart in Gumbo and all things crawfish. With the help of great friends, Roux has been a success. The menus consist of classic Cajun cuisine like Crawfish Étouffée and then dishes with his own twist like Fried Shrimp & Cheese Grits. With great pleasure, he will continue to pursue his passion and provide good food for good people.
