About this FieldTrip

In the 2nd edition of “BAKE with a Pastry Chef”, we’re making a “Depression Cake.” This cake was born out of ingenuity during the great depression when eggs, butter, and milk were very expensive. It’s also been called a "Magic Cake” or “Whacky Cake” due to the absence of dairy. It can be enjoyed by ALL, but it is also naturally VEGAN.

No prior baking knowledge is required. Pastry Chef Maria Kemp of Beyond Decadence will teach attendees how to read the recipe, prep/measure ingredients correctly, and successfully make a cake!

VEGAN
FYI - We’ll make the frosting included with the cake, but it is NOT vegan. Please have the items under Optional #3 ready in order to substitute the non-vegan ingredients.

GLUTEN-FREE (GF)
We’ve had great success with King Arthur Gluten-Free (all-purpose) Measure for Measure Flour.

We’ll be working from this recipe so be sure to gather the ingredients listed in the recipe PLUS the following items:

8 x 8 baking dish
Parchment paper
Non-stick spray
Dry measuring cups
Liquid measuring cups
Measuring spoons
Whisk
Large bowl (for dry ingredients)
A few regular spoons, forks, and table knives
Rubber spatula (to scrape batter)
Wire cooling rack
For frosting only: Electric stand mixer or electric hand mixer with beater attachment.
Toothpicks or cake tester.
Paper towels nearby

Optional:
Espresso powder
Extra powder sugar to dust baked cake instead of frosting
Vegan frosting: non-dairy milk, vegan butter, light corn syrup or maple syrup
