Siblings Aubry and Kale Walch are the owners of The Herbivorous Butcher, America’s first vegan butcher shop, in northeast Minneapolis. Their plant-based meats and cheeses appeal to vegans and non-vegans alike and range from Ribeye Steak to Pastrami to Smoked Gouda to Brie. It’s no secret that more and more people are incorporating more plants into their food choices, which not only benefits their health but also the welfare of animals and the environment.

Aubry and Kale enjoyed an appearance on Food Network’s Diners, Drive-ins, and Dives in July 2016 and have shared their food with Alan Cumming, Moby, Sir Paul McCartney and more. Many local and nationwide restaurants and markets carry The Herbivorous Butcher’s products, and you can find them at Target Field.
