because believe it or not, the order of the steps does affect the end product! (Take my word for it, I'm Mexican and I've mastered the art of Guacamole)
1.- cut the onion in tiny pieces.
2.- put onion in a bowl with lime juice and salt. Let it sit while you follow the next steps. This "cooks" the onion so the flavor is not over-powering.
3.- Cut tomato in small pieces, a little bit of cilantro, and jalapeno or serrano chile. (chose how many depending on how spicy you want it. For mild, use only half of a small jalapeno)
4.- Cut the avocados and mash them in the bowl that has the onions and lime.
5.- Mix in the tomato/cilantro and chile.
6.- Taste and add some more salt if needed. (don't be shy with the salt, its OK!)
and Tah-dah! your guacamole should be amazing!
Recommendation. The cutting table that you are using is for cutting anything that juice like grilled meet, watermelon, etc. That's the reason it has a canal riming the edge.
